CHRIS MALONE
Chris Malone is an Australian-born chef with 16 years of experience across some of the world’s most exacting fine-dining kitchens. He is currently Head Chef of Dinner by Heston in Dubai. Malone trained in Perth, he went on to lead Clarke’s of North Beach, a two-hat restaurant, before continuing his journey to Eleven Madison Park in New York during its time as the World’s No.1 Restaurant. He later moved to London, contributing to the opening of Davies and Brook under Humm, before joining the kitchens of Björn Frantzén and Heston Blumenthal — two of the defining figures of contemporary gastronomy.
In Dubai, Chris Malone has been key to major Michelin achievements, including the opening of FZN, awarded three Michelin stars from launch, and leading Ossiano in retaining its star. At Dinner by Heston, he continues this legacy with food that is flavour-driven, refined, and expressive.
What was the first moment that made you fall in love with food or hospitality?
“When I was really little, my mum was a cake decorator, so birthday cakes were always extravagant, or seeing my grandparents making simple things like porridge in the morning, or the most incredible mash potato, both will a chefs amount of dairy added.”
From a young age, he learned how seasoning and care could change everything. Cooking professionally later deepened his love for both the craft and the industry.
What challenge shaped who you are today?
The biggest challenges came from moving countries — stepping into the unknown, taking risks, and embracing the adventure.”
What’s one rule you live by in your industry or your work?
“To treat everyone with respect and create space for people to be themselves.” For him, hospitality is about people—built on trust, empowerment, and pride, which ultimately reflects in the food and genuine moments for guests.
What’s one lesson you wish the next generation of chefs or young creatives understood sooner?
“Not to rush the process, Enjoy the ride, gain knowledge, travel, and provide yourself with a good foundation before wanting to climb the ranks.”
